I think formats are something the embedded OLE application declare it can handle. So it can be changed to "Rich text" only for something that is able to edit rich text. I suppose it would mean Lotus Notes, but not sure how do you embed Notes object within notes document.
In any case if you can do this manually you should be able to do it also programmatically, but in any case it is going to be application specific.
